I ended up going with the Clear Chat Pro. It's pretty flimsy in construction, but the recording is awesome, and that's all I need it for.

Quite honestly, that headset did not sound bad at all. There wasn't terribly much disturbance (I'm assuming that was before any filtering) at all, and his voice sounded fairly natural.

So I could potentially go with that one, but I'd be interested to hear the others before I make a decision.

Okay, I saw a few USB Microphones. I am now specifically looking for USB headsets (unless someone else has further input). My price range is under $40, and I would prefer a little less. As I said, audiophile quality is by no means necessary, I just need to make sure that I don't purchase another pro...
