OS: Ubuntu Studio 16.04.1 Xenial Xerus LTS
Audacity: 2.1.2, distro release
Audacity was working fine, then it crashed while recording audio and now when I try to start it up, the Terminal returns: (Audacity:18275): Gtk-WARNING **: gtk_disable_setlocale() must be called before gtk_init()
Any Help Appreciated

I don’t think that warning prevents Audacity launching.
Force quit Audacity in System Monitor if necessary, then try deleting the folder ~/.audacity-data/.
If a Debug Report appeared when Audacity crashed, could you please attach the ZIP file that it offered to create.
