I would like to record two different microphones onto two separate audio tracks at the same time. Is that possible using the above parameters? If not, is there an adjustment I have to make in order to do this? Thanks.

You should be able to capture the 2i2 stereo and it will put one microphone on the left and one on the right. You probably don’t even need drivers or software packages.

After you capture the show, use the drop-down menu on the left > Split Stereo to Mono.

That will give you two separate mono sound tracks. You can apply corrections to either one or whatever you want.

Tracks > Mix > Mix and Render to a new track. That should give you a third track with the mix. Do final volume controls > Select it by clicking just right of the up arrow > File > Export Selected Audio.
